Yeast cheese rose.


for the dough:
– 500 g flour

– 100 g of sugar + 1 tablespoon to leaven

– 3 egg yolks

– 1 teaspoon vanilla extract

– 180 ml of warm milk

– 20 g of fresh or dried yeast 7 g

– a pinch of salt

– 100 g of melted butter

– Zest of 1 lemon

for the filling:

– 300 g ricotta cheese (can be replaced by fat cottage cheese)

– 100 g of sugar

– 1 egg

– 75g ground almonds or hazelnuts

– The peel of 1 orange –

– 1 teaspoon orange essences

– 1 tablespoon almond flakes

– Powdered sugar


1.dough:Fresh yeast knead and mix with a spoon of sugar. Milk slightly warmed. Melt the butter and cool. Mix the egg yolks with the rest of the sugar, vanilla and salt. Flour mixed with lemon zest.
Cultures mix with flour, egg and milk. Knead the dough, add the melted butter and mix. Kneading for about 15 minutes by hand or in a kneader 7-8 minutes. The dough is left to rise in a warm place until it has doubled in size (you will need about 1 hour).

2.filling: In a bowl, mix cheese, orange zest, ground almonds, sugar, orange essence and a small amount of whipped egg eggs – about 1 tbsp.

3.Divide dough into 12 pieces. Every part of the roll out into a circle, make an incision in the middle of a put stuffing, walnut-sized, fold the dough a rose, as shown in the picture.

4.Biscuits put on a baking sheet, cover with a damp cloth and leave to rise for an hour. During this time, preheat the oven to 190 º C. Grease roses beaten eggs mixed with 1-2 tsp water, sprinkle with almond flakes.

5.Bake for about 20-25 minutes until brown. Cool and sprinkle with powdered sugar.
