Vegetable stew in tomato juice.
Ingredients:
Potatoes 1 piece.
Onion 1 pc.
Pepper 0.5 pcs.
Zucchini (courgettes) 1 pc.
Tomato juice 1 cup
Salt and pepper to taste
Pepper black pepper to taste
Bay leaf to taste
Vegetable oil to taste
Greenery: parsley, dill, chives to taste
Preparation:
Potatoes and zucchini cut into cubes.
Onion – half rings, carrots – segments.
In vegetable oil to brown the onions and carrots, then add the potatoes and simmer, covered for 10 minutes.
Add zucchini, bell pepper, tomato juice.
Put the bay leaf, peppercorns and salt and pepper to taste. Simmer, covered for 10 minutes.
For 5 minutes until cooked add the chopped parsley.
