Tomato soup with basil

-10-12 pieces of tomatoes
-1 teaspoon olive oil
-1 tablespoon of coconut oil
-1 large onion, sliced
-2 cloves garlic, minced
-½ teaspoon of crushed red pepper
-400g canned tomatoes
-50 g sun-dried tomatoes, chopped
-1 liter chicken stock
-bunch fresh basil
-50 g of cream cheese

Preheat oven to 180C.
Sprinkle the tomatoes with olive oil and season with salt.
Put the tomatoes on a baking sheet and bake for 40 minutes.
Melt the coconut oil and fry the onion and crushed red pepper for 5-7 minutes.
Add garlic, mix and cook for another 30 seconds.
Add chopped canned tomatoes, chicken broth and dried tomatoes.
Bring to a boil, then add the roasted tomatoes.
Simmer for 10 minutes.
Add basil and cream cheese, stir until cheese is completely melted.
