Ingredients for 2 servings:
-4 medium sized eggs
-2-4 slices of bread
-1 ripe avocado
-lime juice
-Salt and pepper to taste
Preparation:
Heat over medium heat a frying pan with non-stick coating.
Beat the eggs and when the proteins begin to fasten, pour about half a cup of boiling water.
Cover and cook (or broil J) to the desired readiness.
Meanwhile, make the toasted bread.
Mash avocado and season it with lime juice, salt and pepper.
Toasts lubricate the mashed avocado and top with poached eggs.
