Tartlets filled with citrus


Flour – 250 g
Butter – 125 g
Powdered sugar – 60 gr
1 egg
A pinch of salt

Lime – 2 pcs.
3 eggs
Sugar – 125 g sugar
Cream 33% – 80 ml


1. Sift flour with a pinch of salt, mix with powdered sugar. Chop into crumbs with cold butter (you can do it in a food processor), add the egg and quickly knead the dough.
2. The dough is spread on the tartlets, prick with a fork in several places, send a half hour in the freezer.
3. orange and lime washed, scalded with boiling water. Squeeze the juice from the fruit, peel and grate. Add eggs, sugar and mix well. Leave to infuse for 30 minutes. Strain the mixture through a sieve, mix with cream.
4. Tartlets lightly browned in the oven at 200 degrees for 10-15 minutes.
5. Reduce the oven temperature to 150 degrees and pour directly into the tartlet stuffing. Bake for about 30 minutes, until completely filling thickening.
