
Spicy Thai salad with green papaya
Ingredients:
- 2 peeled and seeds and coarsely grated or cut into thin strips large or medium-sized green papaya
- 2 peeled and coarsely grated or cut into thin julienne carrots
- 1/2 cup fresh lime juice
- 3 tbsp. l. plus 1 hour. l. Thai fish sauce
- 1/4 cup minced shallots
- 3 seeded and chopped Thai chillies
- 3 tbsp. l. coconut sugar or golden cane sugar
- 1.5 h. L. minced garlic
- 2 tbsp. l. chopped fresh mint leaves
- 1 tbsp. l. chopped fresh cilantro leaves, plus 1/3 Art. leaves for decoration
- 1/2 cup finely chopped peanuts for decorating
Preparation:
In a blender, combine the lime juice, fish sauce, shallots, chilli, sugar and garlic. Whisk until smooth. Let stand 15 min., To the tastes blended.

In medium-sized bowl of an inactive material or a salad bowl, combine the papaya, carrot, mint leaves and chopped cilantro. Add the dressing and mix well. Garnish with coriander leaves and chopped peanuts. Serve immediately.
