Soup with meatballs.

Ingredients:

For the soup:
● 400 grams of beef soup (with bones)
● 1 parsley root
● 120 grams of carrots, grated on a coarse grater
● 1 onion (small)
● 1 tomato
● 1-2 potatoes
● 1 cup fresh green peas (beans or young pods)
● 1/2 sweet red pepper
● 3-4 bay leaves
● salt, ground black pepper to taste

For the meatballs:
● 400 grams of ground beef
● 1/2 cup of rice
● salt, ground black pepper to taste

Preparation:

1. Place the beef in a pan of cold water (about 2.5 liters) and bring to a boil. Remove the foam and cook for 1-1.5 hours on low heat.

2. Peel and chop parsley root, onion, grate the carrots and place all the vegetables into the broth. Cook for another 20-30 minutes.

3. While the soup cooks, make the meatballs. To do this, place the rice in a small saucepan, cover with cold water, add salt and put on a moderate fire. After boiling, cook for about 10 minutes. Fold the rice in a colander, rinse with cold water and let cool to room temperature.

4. Place the beef in a bowl, add salt and black pepper. Add the cooled rice and mix everything carefully.

5. Roll small meatballs prepared stuffing.

6. When the soup is ready, remove the piece of meat and set aside for use in any other dish.

7. Peel the potatoes and cut into slices. Put it in the soup.

8. Cut the tomatoes into small pieces and add to the soup also.

9. Add the peas to the soup.

10. Cut the peppers into thin strips, and also put it in the soup. Cook the soup over moderate heat for 10 minutes.

11. Add to the soup prepared meatballs, salt and pepper. Cook for another 10 minutes, then turn off the heat and let it brew for approximately 10 minutes.
