Sofrito: chicken with potatoes and onions.


-Chicken – two quarters, cut in half to taste
-Potatoes 5 pcs.
-Bow 3 pcs.
-Sprig of rosemary, sweet paprika, turmeric, salt and pepper to taste
-Olive oil to taste


In a heated pan pour oil (not sparing), and add a little paprika and turmeric.

And just immediately send coarsely chopped potatoes.

Salt, pepper and fry until golden brown on all sides.

While fried potatoes, mix paprika, turmeric, salt, pepper and a little olive oil.

And bathed in the resulting mass of chicken.

Once the potatoes will be ready, I put it aside, and a new large oil fry chopped onion.

And then the chicken until thoroughly browned on all sides. It’s time to throw a couple of sprigs of rosemary.

Once the chicken is ready, and merge oil and rosemary, add to the pan the potatoes, onions and fresh rosemary, pour a glass of cold water.

Cover with a lid and simmer on low heat for 30 minutes.
