Country of mysterious legends, traditions and wonderful fairy tales – Slovakia. How not to be called a fairy and a magic country where preserved about 180 of medieval castles, among the walls of which, according to local residents still roam the spirits of their famous owners.

In an instant, like a fairy tale, from Slovakia, you can find yourself in another country – its capital Bratislava, very closely connected with Hungary and Austria. So close that it just creates the illusion of the fairy world, after passing on the street Kopchanskoy, without turning, you can find yourself in the Austrian city kittsee Pressburgershtrasse on, and until 1945 the usual tram could get from Bratislava to Vienna.

Pečené vepřové koleno (roasted pork knuckle)


knee on the front leg of pork (knuckle) – 2 pcs
dark beer
2 onions
2-3 sour apples
nutmeg, allspice and black pepper, bay leaf, salt
head of garlic
2 tsp French mustard (with grains)
1 tbsp honey
2-3 tablespoons soy sauce

How to make:

Prepare the marinade: cut the onion half rings and slice the apples, put all the spices, pour the beer. Immerse the shank in the marinade for 10-12 hours (at night or in the morning). Then put the pan with the knuckle marinated on the fire, bring to a boil and cook for about an hour on low heat. Then pull out the shank, cool, make incisions into which the garlic cloves. Mix the mustard, honey, soy sauce and coated with each shank on all sides. Wrap in foil and bake in the oven for 40 minutes, then uncover the foil and bake another 20 minutes for a delicious golden crust. The hardest part of this recipe – stand an amazing fragrance that spreads all over the kitchen. Tip: buy once 4 shank!

Tradičné šišky (traditional donuts)


So, we prepare the most traditional dessert – donuts!


1 kg flour
zest of half a lemon
40 g fresh yeast (or dry bag for baking)
4 egg yolks
80 g of powdered sugar
100 g butter
a pinch of salt
milk – about 1/2 cup
2 tablespoons Roma
250 g jam (apricot)
Vegetable oil for frying
powdered sugar with vanilla for sprinkling

How to make:

Pre-mix the flour with the lemon zest and salt. Dilute the yeast in warm milk. Knead the dough from flour, egg yolks, sugar, melted butter and rum, pouring milk-yeast mixture. The dough should be elastic, not lipnuschim to the hands, but not cool! Sprinkle the dough with flour, cover with a cloth and leave to approach for an hour and a half. Roll out the dough into a thick layer 1 1, 5 cm, cut out circles (glass can be). In the center of each circle and spread a spoonful of jam zaschipyvaem dough so as to obtain the ball.
