Salmon with vegetables baked in foil.

-Salmon fillet – 4 pieces 150-200 grams
-Zucchini – 2 pieces (or 350 grams)
-Yellow zucchini – 350 grams
-Shallots – 2 pieces
-Garlic – 1-2 cloves
-Olive oil – 2 ½ tbsp
-Lemon juice – 1 ½ tablespoons
-Large tomatoes – 2 pieces
-Cumin – 1 teaspoon
-Oregano – ¾ teaspoons
-Salt and black pepper – to taste

Cut the foil on 4 large sheets.
Zucchini, zucchini and one onion cut into half rings. Drizzle vegetables with 1 tablespoon oil, season with salt and pepper and place on each of the pieces of foil in the middle.
Salmon 1 tablespoon of oil, sprinkle both sides with salt and pepper and place on top of vegetables. On top drizzle with lemon juice.
The remaining chop the onion into small pieces. Mix with chopped tomatoes, cumin, oregano and remaining oil. Add a little bit of salt and pepper. Place the mixture on top of salmon.
Carefully wrap the vegetables and the fish in foil. Bake in a preheated 200 degree oven for 25-30 minutes.
