Salmon tartare.

-25 g arugula
-200 g of olive oil
-2×250 g salmon fillet
-3×100 g smoked salmon
-1 lemon
-200 ml crème fraîche or sour cream
-15 g chives

Cut the roots with arugula and place it in a blender, pour slowly to the oil. Add salt to taste.
All the salmon cut into small squares. Cut 8 tonkihdolek lemon, squeeze out the rest. Mix all the chopped salmon with juice, sour cream and about 3/4 finely chopped onion. Put in a bowl, cover with cling film and refrigerate until needed.
On a serving platter Put about 1/8 mixture of Tartarus. The convex part of spoon press. Put a slice of lemon and sprinkle with cooked butter.
