Salad with rice, peas and avocado

• 1 cup of brown rice
• 2 avocados
• 2 carrots
• 1 cup of sweet pea (pods), or green peas (fresh or frozen)
• 1 cup pistachios, preferably without added salt
• parsley leaves
• mint leaves
• 2 tablespoons sesame seeds, preferably black
• sea salt and black pepper
For the filling:
• 1 lime
• 2 tablespoons of hemp paste / urbech, or any other paste or seeds (eg Tihinen)
• 4 tablespoons olive oil (or sesame oil)
• 4-5 tablespoons water
• 2 tablespoons tamari sauce
• 1 teaspoon of maple syrup

Cooking method:
To prepare the salad: Cook brown rice and rinse with water after readiness. Peel and slice the avocado and carrots, cook the peas / peas. Chop the greens. Add rice, vegetables and herbs in a large size bowl and then add the pistachios, sesame seeds and salt and pepper.
To prepare the filling hemp: Squeeze the juice from the lime and mix by hand or using a blender with hemp pasta, olive oil, water and tamari until smooth. Dress the salad just before serving, otherwise it will soften.
