Roasted vegetables with Provencal herbs.

It’s simple … any vegetables, in my case, peppers, eggplant, zucchini, tomato, red onion, cut into thin rings. Lay in a baking dish. Sprinkle dry Provencal herbs, salt, drizzle with olive oil. Bake at 180 degrees for about 25-30 minutes.
