Risotto with cheddar

Risotto with cheddar.

-Butter – 1 tablespoon
-Vegetable oil – 1 tbsp
-Leeks – 2 beam
-Rice for risotto (such as Arborio) – 1.5 cups
-White wine – ½ cup
-Dijon mustard – ½ teaspoon
-Hot vegetable broth – 4 cups
-Grated cheddar cheese – 1 cup


1. In a saucepan over medium heat, heat the butter and oil.
2. Fry the chopped onion, stirring occasionally, 2-5 minutes.
3. Pour rice and cook for a minute.
4.Increase fire and pour the white wine and mustard. Cook, stirring, until all the liquid is absorbed.
5. Gradually pour the hot broth 1 cup (1 cup of the broth is not absorbed, the second does not pour). Cook rice until al dente state (about 20 minutes).
6.Stir cheese and toss to evenly raplavilsya cheese.
7.Lay in the a la carte dishes and an additional top prispyte onions if desired.
