Composition:
-Classic cake from one egg.

-jelly, mango puree and jelly maliny,

-Glyassazh

Creamy vanilla cream:
— 250 g of cream 33%
— 50 g of sugar,
— 90 g egg yolks,
— 5 g of the gelatin sheet,
— 100 g cream,
— Natural vanilla pod 1.

Glyassazh:
— 130 g of sugar,
— 155 g of white chocolate
— 54 g water
— 130 g of glucose,
— 71 g of milk,
— 15 g of milk powder
— 11 g of gelatin sheet,
— Orange dye.

Cooking method:  
Creamy vanilla cream.
Cream with vanilla bring to a boil. Yolks with sugar, pour a thin stream of cream. Stir until smooth. Pour back into the ladle and cook over low heat, stirring constantly, until thick and 82-84 degrees. Remove from heat, add the pre-soaked gelatine. Cool. Whip the cream to soft peaks and whisk to stir the custard.

Build.
Pour into forms-hemispheres (7 cm diameter) cream filling half. Inside lay frozen raspberry jelly to connect with mango, cut the diameter of crimson. Attach jelly cream, cover with biscuit, lightly pushing and scrolling. If you want to add the cream around the edges, or vice versa to remove excess spoke.
