Ingredients:
-1 medium potato per person
-1 egg per person
-Pesto – 1.5 tablespoon / person
-Olive oil – 1 tbsp
-Garlic
-Salt and pepper
Heat oven to 175 degrees. Potatoes Wash and clean. Finely chop, put in a pan and sprinkle with salt, pepper, drizzle with olive oil. Squeeze the garlic and throw it in the pan. Fry the potatoes for about 5 minutes, then transfer to a baking dish, toss with pesto sauce and place in oven for 5-10 minutes. Cook until crisp. Break the eggs and keep on top of the oven until cooked eggs. Garnish with basil.
