POTATO SALAD Danish

Ingredients:
•  600 g raw potatoes

•  1 cucumber
Sauce:
•  250 g cream
•  250 g of mayonnaise
•  1 tsp salt
•  1 tsp curry powder
•  0,5 tsp freshly ground black pepper
•  1 small onion, finely chopped
•  1 tbsp chopped fresh parsley
Preparation:
1. Boil the potatoes in their skins (this can be done the day before), completely cool and peel.
2. Cut the potatoes into cubes.
3. Cut the cucumber into small cubes, put in a colander and sprinkle with coarse salt. Leave a colander in the sink for 15-30 minutes to excess fluid glass.
4. Mix all the sauce ingredients.
5. Pour the sauce mixture of cucumbers and potatoes.
Serve immediately.
