Pork with persimmon.
– Elongated piece of pork (I had cut from the neck part), 1 kg,
– 1 apple persimmon,
– A few rings of red onion,
– salt pepper,
– olive oil,
– 1 tablespoon of liquid honey.

Pork wash, dry, rub with salt and pepper. Fry in olive oil on all sides until golden brown over high heat. Make small incisions across, but not completely. Put them on a piece of persimmon and onion rings. Put the meat on a baking sheet, drizzle with olive oil, sprinkle with honey.

Bake at 180 degrees for about 35-40 minutes. I had a small piece of meat, so after 30 minutes pulled. Cover the meat with foil and let cool 10 minutes. Serve with salad or vegetables. The sauce here is not necessary, because it is very tasty and juicy, a bit of sugar with persimmons.

I should add that the meat turned out juicy and soft, perhaps even because of the neck, but worried it would be dry.
