Pizza with zucchini, eggplant, tomato and mozzarella.

For the dough:
– Article 1.5 (240 ml) of flour,
– Article 0.5 of water,
– 0.5 teaspoon salt
– 1 tbsp sugar
– 1 tbsp butter (melted) butter,
– 2 tbsp olive oil
– 1 teaspoon dry yeast.

– 10 circles zucchini,
– 10 circles of eggplant,
– 10 tomato slices (I had yellow)
– 200 g mozzarella (suluguni)
– Salt, pepper, garlic, basil.

Mix the flour with the dry ingredients. Add warm water, cream and olive oil and pour into the flour mixture. Knead a soft elastic dough. It may need more flour-less.

Put the dough in a bowl, cover with cling film and let go 1:00. Roll out the dough into a rectangle thick. 0.5-1 cm, put on a baking sheet. Coat with olive oil.

Zucchini and eggplant lightly fry in vegetable oil, dry on a paper towel. Top with strips of zucchini, tomatoes, eggplant, sprinkle with garlic and cover with slices of mozzarella. Do not forget the salt and pepper. Put Bake in preheated to 180 degrees. oven. Bake until it browns about 20-25 minutes.

Pull from oven and before serving sprinkle with fresh basil. I grew up some super-basil, with very large leaves, curly-haired, with mad flavor.
