Peking Duck

-Bird ducks 1 pc.
-3 tablespoons honey. l.
-1 cup orange juice
-zest of 1 orange taste
-cognac 2 tbsp. l.
-3 tablespoons soy sauce. l.
-ground ginger 0.5 h. liter.
-salt and pepper to taste

Wash the duck, rub it with salt inside and out, pour cognac and put in the refrigerator overnight.
In the morning a duck coated with a mixture of honey and zest and put back to 3:00.
We spread the duck on a baking sheet, ready made with foil and wrap it tightly.
Put in the oven for 1.5 hours (380F). Pour precipitated juice / grease to the duck was not dry.
Prepare a mixture of orange juice, ginger, pepper and soy sauce, add 2 tablespoons of melted duck tablespoons fat.
Pour prepared marinade whole duck, including the abdomen, and again put in the oven for about 40 minutes.
When piercing the meat with a fork stands out clear juice, then the bird is ready.
