Pancetta with spices.


1.5 kg pork pancetta (abdominal part)
4 garlic cloves
3 tbsp large sea salt
1 tbsp brown sugar
3 tbsp. l. black pepper
1 tbsp rosemary
1 tbsp thyme
2 bay leaves (chop)
0.5 hours
1.5 tbsp smoked paprika

Cooking method:    
Cut off the skin with pancetta and cut straight edges to get a rectangle
Rub the salt and sugar pancetta
Share pancetta in a bowl, cover and place in refrigerator for 1 week, turning occasionally meat
Clear pancetta with salt and spices (you can rinse with water) dry
Grind garlic and mix with other ingredients
Rub this mixture of pancetta and roll to roll
Tie the thread tight, wrapped in a napkin and put it on the bottom shelf of the refrigerator for 2 weeks, as needed changing cloth
