Pancakes with spinach.
Ingredients:
Fresh spinach – 200g
Chia seeds – 3 tablespoons (can be replaced with 7 tablespoons of oil)
Water – 1/2 cup (using oil, water is not needed)
Rice flour – 2/3 cup
Preparation:
Chia seeds are soaked in water to form a gel. Whisk with spinach in a food processor. Add the flour and whisk, mix until smooth.
Spoon Scoop the dough and pour in the heated pan. Fry the pancakes on both sides.
Serve with hummus
and fresh vegetables.
