Ingredients:
1 lb cod, sole or flounder
2 tbsp cornmeal
2 tbsp flour
1/2 tsp cajun spice
2 tsp oil
1 dash salt & pepper
1 tbsp parmesan cheese
Directions:
1.Combine flour, cornmeal, cheese, & spices.
2.Preheat oven to 450°F.
3.Dredge fish in mix.
4.Spray pan with cooking spray.
5.Arrange fish in pan and drizzle with oil.
6.Bake for 8-10 min.
