Orange almond Cake

Very juicy cake of Valencia with a delicate orange flavor. How many Spanish recipes are olive oil replaces butter. In the old days it was necessary to warm the olive oil, to save him from the sharp taste and smell.


You will need
From 6-8 servings:
175g plain flour
2 tsp baking powder
100g ground almonds
Sugar 175 g
1/2 tsp salt
3 eggs, beaten
200ml light olive oil
1 orange, squeeze the juice and grate zest

How to cook
1. Preheat oven to 170 g C. greased form cake pan with a capacity of 1 kg.

2. Mix all the dry ingredients, add the remaining ingredients and stir with a wooden spoon. Or all you can chop in a food processor. The dough should easily run off the spoon easily – add the orange juice, if needed.

3. Put the dough into the mold and bake for 50-60 minutes, until the dough will not rise and cake will not become elastic and will not deviate from the walls. Check readiness after 45 minutes, and if the top begins to burn, cover with foil.

Serve the cake with orange slices, sprinkle with orange honey and slivered almonds. In an airtight container it can be stored for 2-3 weeks.
