Muffins «Red Velvet».

For the dough:
— 125 g flour
— 150 g of sugar,
— 60 g of butter,
— 120 ml of buttermilk (kefir)
— 1 egg,
— 1 tbsp cocoa
— 1 tbsp of liquid red food coloring
— 1/2 tsp baking powder,
— 1/4 teaspoon baking soda,
— 1/2 teaspoon of vinegar.

For the cream:
— 250g mascarpone
— 150 grams of cream 33-35%
— 60 g of powdered sugar.

Cooking method:    

Mix the dry ingredients except the sugar. Mixer beat the butter and sugar until fluffy, add the egg. Yogurt mixed with dye and vinegar. Add dry ingredients alternately and yogurt in the oil mixture, still whisking. Start and finish with dry ingredients. Decomposed with a spoon for ice cream to 2/3 of the dough on the cuff, which insert into a mold for muffins. Bake at 175 degrees. to dry kindling. Cool on a wire rack. Decorate with cream.

To whip cream mascarpone cream, vanilla and sugar. Transfer to a pastry bag and decorate the top of the muffin.
