Muesli of figs


Figs – 300 g
Honey – 50 ml
Lemons – 1 pc.
Oat flour – 300 g
Almond flour – 200 g
Rice flour – 100 g
Baking powder – 1 tsp
Baking soda – 1/2 tsp
Sea salt – 1/4 tsp
Almond milk – 100 ml
Almond oil – 30 g
Flakes Hercules – 100 g
Sugar, sand – 200g
Vanilla extract – 1 tbsp. l.
Coconut – 50 g


1. Fig soak overnight in water.
2. In a food processor mix the soaked and dried figs with honey and half lemon juice. If the paste is too thick, add 1 cup of water, which insisted figs.
3. Preheat the oven to 190 ° C. In a bowl, mix oats, rice flour and almond flour with the baking powder, baking soda and salt. Add the lemon juice and zest, almond milk, almond oil, half of oats, coconut sugar and vanilla and mix everything together.
4. A small pan covered with parchment paper. Put half of the dough on the bottom of the pan and spread it evenly with clean hands. Top with: Peach puree evenly. Then again, the remaining dough: Peach puree and put pressure on him so that stuck together, trying not to disturb the layer of rice. Sprinkle all the remaining oats, coconut.
5. Bake on medium heat for 25 minutes. Remove from the oven and allow to cool completely. Remove the parchment and carefully cut with a sharp knife.
6. Cover and store in the refrigerator for a week.
