Mint-lemon cake

Mint-lemon cake.

crackers / cookies – 10 pcs.
Lime – 3 pieces.
Lemon – 3 pieces.
flour – 1/2 cup
mint – 3-4 cups
Sugar – 1-2 tbsp. l.
condensed milk – 400 ml
melted butter – 6 tablespoons. l.
Eggs – 2 pcs.

The first thing crush crackers into fine crumbs.
Then add 1/2 cup of flour, sugar and melted butter. Stir. And put this mixture on a baking sheet lined with foil. Firmly tamp. Bake for 6-7 minutes in the oven, preheated to 175 degrees.
Meanwhile, in a blender, combine the condensed milk with the eggs. Add the lemon zest. Stir and add the lemon zest and lime juice.
Mix and pour into a bowl.
In the same blender, chop the mint and lime zest. Add half the lemon mixture. And put this weight on the already baked cake. Optionally you can add green food coloring.
Bake for 5-6 minutes.
Remove from oven and fill with remaining lemon mixture. Bake another 15 minutes.
Allow to cool and keep in refrigerator for 2 hours. Then you can cut into squares and serve!
