Lemon parfait with blueberries.

Soft, thick frozen dessert with cream, sugar syrup, whipped eggs and aromatic additives — what could be better! Do you think this ice cream? No it parfait — more gentle and air.

INGREDIENTS
400ml double cream
1 cup of sugar
4 large eggs
1 cup blueberries, plus a little more for decoration
3 large lemon
30 ml liqueur Limoncello
2 tbsp. l. grated dark chocolate (60-70% cocoa), plus a little more for decoration
a pinch of salt

COOKING METHOD
1. Lemons wash brush, scald with boiling water, wipe dry. Erase zest fine grater and squeeze the juice from the lemons. In saucepan, combine the lemon juice with 1/2 cup sugar, stirring, bring to a boil. Cook over low heat until sugar is dissolved and thickened, 5 minutes. Add the liquor, stir, remove from heat, cool.

2. Whisk the very cold cream into stable foam and remove it in the refrigerator. Separate the yolks from the whites. Whisk the egg yolks with an electric mixer with lemon syrup, in the refrigerator.

3. Protein whisk with a pinch of salt in a lush lather. Continuing to whisk, gradually sprinkle in the remaining sugar. As a result, it should get a foam which does not flow from an inverted spoon. Connect proteins with lemon yolk mass, stirring from the bottom up silicone spatula. Add the cream, stir gently again.

4. In the resulting mass add 1/3 2 tbsp. l. grated chocolate and stir. The remaining mass gently stir in lemon zest. Put half the weight of a lemon peel in a plastic container lined with foil, level. Close the lid and put in the freezer to the mass of clutching, 30 min.

5. Then, put in a half container of blueberries, level, top with a lot of chocolate. Again, close the lid and put in the freezer for 30 minutes. Then lay out the remaining blueberries, her remaining mass. Place in the freezer until complete solidification, for 3 hours. Before serving, move the parfait from the freezer in the refrigerator for 20 min., Then garnish with blueberries and grated chocolate.

Note: All the ingredients that are added to the parfait, need to be very cold, otherwise it will not hold the shape.
