Ice tea gin and cardamom


  • 1 tablespoon cardamom fruits
  • 1/4 cup sugar
  • 1 piece (2.5 cm.), Ginger, peeled and sliced
  • 3 bags of black tea
  • 180 ml. gin
  • 30 ml. sweet vermouth
  • 1/2 tsp orange bitters
  • Zest of orange or lemon, cut strips for garnish

Fry, stirring constantly in a frying pan at medium temperature cardamom fruit, until fragrant, about 1 minute.

Add to the pan 3 cups of water, sugar, ginger and bring to a boil. Reduce temperature and simmer until the mixture is reduced to 2 cups, about 10 minutes.

Strain the syrup into a measuring jug. If you get less than 2 cups of syrup, add hot water. Add syrup teabags brewed and leave for 3 minutes. Then remove the tea bags and syrup to cool to room temperature.

Pour into a large cocktail shaker syrup, gin, vermouth and bitters, add ice and shake well for 15 seconds. Then pour the cocktail into a jar filled with ice. Add orange zest or lemon.
