Hot Jamaican in the oven

What do you need:

700 g of fresh carbonade
1 clove of garlic
1 tbsp. l. brown sugar
1 h. L. grated lemon peel
0.5 h. L. ground ginger
1 tbsp. l. dark rum
180 ml chicken broth
a pinch of grated nutmeg
salt, black pepper and allspice

What to do:

Pork wash, dry. Put in a baking dish.

Garlic peel and finely chop. Mix with the sugar, lemon zest, ginger, rum, salt and spices.

Put the mixture on the meat. Pour 1/3 of the chicken stock. Bake in a preheated 200 ° C oven for 10 minutes. Add another 1/3 of the broth, cook for 10 minutes. Pour the remaining broth and bake for 15 minutes.

Put the pork in a dish, cover and leave for 10 minutes. Cut into thin slices, pour the juice from the mold. You can submit the meat with dried fruit.
