Honey date-Petit Fours in creamy frosting.


3 eggs.

100 gr. honey.

250 gr. soft dates.

100 gr. brown sugar.

110 gr. flour.

Zest of one orange.

2 tbsp. l. olive oil.

20 c. walnuts (chopped quite finely).

¼ h. Liter. disintegrant.

A pinch of salt.


150 gr. cream 33-35% fat.

75g. butter.

¾ cup sugar. (a glass of 250 ml.)


Dates release from the bones, and then turn the flesh into a puree (in a blender). Orange peel grate on fine grater. The proteins separate from the yolks. Beat the egg yolks with sugar, add honey, olive oil, zest, beat again. Add a date puree, stir, then add the sifted flour with baking powder, mix again.
