Homemade English muffins in the pan


2 teaspoons yeast
½ teaspoon sugar
1 cup warm water
½ cup of warm milk
3 cups flour
1 teaspoon salt


Mix yeast, sugar and half of the water in small bowl. Stir with a fork until the yeast is dissolved. Then close the bowl with a towel and leave for 5 minutes until the yeast is activated. Add the remaining water and milk, and leave for 5 minutes under a towel.
In the bowl of a mixer, combine the flour and salt, add the yeast mixture.
Start kneading the dough and stir about 4-8 minutes until the dough is soft and elastic. Put the dough in a greased bowl, cover it with cling film and a towel. Leave 90 minutes, the dough increased approximately 2 times longer, the better.
Put the dough on a floured surface, divide it into 8 equal pieces and roll out each ball. Put the balls on a baking sheet, greased and sprinkled with cornmeal. Close the pan with a towel and leave for 30 minutes.
Heat a frying pan over medium heat and lightly grease it with oil. Fry the first on one side for 10 minutes until golden brown and then flip and cook for 10 more minutes.
