Hawaiian coconut cake with caramelized pineapple

  • 3.5 cups of Mochica (sweet rice flour)
  • 1 jar (450 gr.) Coconut milk
  • 2 cups sugar
  • 3 h. L. baking powder
  • 5 eggs
  • 2 cups milk
  • 1 h. L. vanilla extract
  • 110 gr. (1/2 cup) melted butter
  • Caramelised pineapple (see. Recipe below)

Caramelised pineapple:

  • 1.5 cups of diced fresh pineapple
  • 1/2 cup butter
  • 3/4 cup dark brown sugar
  • 1 h. L. vanilla extract

Preparation coconut cake caramelized pineapple:
Preheat oven to 180 ° C.

In a bowl, gently mix rice flour, sugar and baking powder. Add the eggs, milk, coconut milk and vanilla extract. Whisk, whisk the dough well. Add the melted butter and pour into baking dish size 23h33 cm.

Bake in preheated oven for 45 minutes. until golden brown. Cut squares of 8 cm. And serve with caramelized pineapple.
