Everyone knows that to make their menu more useful by simply adding fish to it. The main thing in this case you do not have to choose between the use and pleasant taste, because these recipes like this will make even modest halibut dish of the week.


Cherry tomatoes (cut in half), 300 gr.
Ground coriander seeds 1 ch. L.
Baby zucchini (cut lengthwise into four pieces) 5 pieces
Olives 0.25 cup
Lemon (finely chopped) 1 pc
Lemon juice 3 tablespoons
Halibut steak (170 gr., 2.5 cm. Thick) 4 pcs
3 tablespoons butter
1 tablespoon thyme leaves
Balsamic vinegar 1 tbsp
Olive oil 1 tbsp
Kosher salt and freshly ground pepper to taste


Preheat oven to 180 ° C. On a baking sheet lay out the tomatoes, thyme, pour the olive oil. Turn the tomatoes cut side up, and season with salt and pepper. Bake the tomatoes for 45 minutes until they are slightly podsushatsya. In a large skillet melt 1 tablespoon of butter. Season halibut with salt and pepper and place in the pan. Cook over moderately high heat until it is lightly browned on one side, about 3 minutes, to pass on to the plate.

Add the remaining 2 tablespoons of butter, continue to cook over moderate heat until the fish begins to acquire a brown color, about 2 minutes. Remove from heat, add lemon juice and season with salt and pepper.

Put 4 long sheet of parchment paper. In the center of each put 3 slices of lemon on top of the fish. Arrange next round fish tomatoes, olives and zucchini, sprinkle with oil and sprinkle with coriander. Fold the parchment and fold the edge to seal. Put the fish on a baking sheet. Bake for 15 minutes. Remove the parchment and serve.
