Grilled salmon with purple mashed potatoes and mango salsa.

To puree
Ingredients:
800 grams of purple potatoes*
80 ml cream 35-38% fat
60 ml of milk
3 tbsp butter unsalted butter
1 tbsp honey
2 tsp salt
1/4 teaspoon cinnamon

*Purple potatoes can be substituted for conventional.
Preparation:
Potatoes are washed, folded into a saucepan and cover with cold water so that it covers it completely. Peel do not need to cook in uniform! After boiling, add 1 teaspoon of salt, stir and cook for 15-20 minutes over medium heat, without a lid. Check readiness fork or toothpick if easily and smoothly enters the potatoes, then it is cooked. Drain and left for 5-10 minutes to cool slightly. Next, remove the skin from the flesh and cut them into small pieces. Lay back in the pan and beat until smooth tolkushkoy. Milk and cream combine in a bowl, add to the butter, salt, honey and cinnamon. Heat in the microwave or on the stove. The mixture should be hot but not boiling! Gradually, in several steps add to the potatoes, mixing thoroughly every time. For very soft consistency wipe the puree through a sieve.

For the salsa with mango
Ingredients:
1,5-2 pieces ripe sweet mango
1 cucumber (medium size)
1/2 small red onion varieties
Pepper 1/2 «jalapeno»
2 tbsp lemon or lime juice
+ Bunch of fresh cilantro (ground need 3-4 tbsp)
+ Salt, black pepper
Preparation:
Onions and peppers, «jalapeno» finely chopped, add to the bowl. Cucumber and the mango peel and chop into small cubes, chop the cilantro as medium-sized and in a bowl add all to the onions. Season with salt, pepper, season with lemon juice.

For the grilled salmon
Ingredients:
4 pieces of salmon fillet
+ Olive oil, salt, pepper
Preparation:
Salmon rinse with water and dry with a paper towel from all sides. Season with salt and pepper and coat with olive oil.
Preheat the grill to 450 F or 235 C. Post coals burn: do not open fire, but they still should not start to decay, just to be very hot and red in the middle. Place the salmon on the grill, loin down and party with scales upward. Cook 7 minutes without a lid, then gently flip side with scales and keep for another 3 minutes. Done!
On the a la carte dishes in the center to put mashed potatoes, making a slightly elongated shape, it put the salmon and top with 2-3 tablespoons of salsa. Serve immediately!
