Green scrambled tofu.

Ingredients:
-Zucchini 2 cup
-Pressed Tofu 400-450 gr.
-Frozen spinach, 1 pc pack.
-Olive oil or coconut oil 2 h. L.
-2 tablespoons tahini. l.
-Turmeric 1/2 hours. L.
-Salt to taste
-Black pepper to taste

Preparation:
Heat a large frying pan or wok over medium heat. Add the butter and saute zucchini until soft (4-5 minutes).
In a bowl, crumble the tofu with your hands or a fork.
Thaw spinach and squeeze out the excess liquid. Cut and mix with tofu.
When the zucchini will be ready, add a mixture of tofu and spinach, tahini and turmeric. Mix well and cook for a few minutes.
Add some water, if necessary.
Season with salt and pepper and serve.
