Fried eggs with vegetables

It is delicious, rich and colorful breakfast. Such breakfast, we offer you and to cook. This egg has everything: hearty potatoes, bell peppers, juicy tomatoes and refreshing greens! Let the delicious morning starts!


Servings: 4 pcs.

Preparation time: 25 minutes

Ingredients:

Eggs — 4 pcs.
Potatoes — 1 pc.
Bulgarian red pepper — 1 pc.
Tomatoes — 2 pcs.
Tomato paste — 1 tbsp. l.
Hops-suneli — ¼ h. Liter.
Black pepper powder — ¼ h. Liter.
Greens (parsley, basil, arugula)
Olive oil
Salt

Preparation:

1. The potato peel, pepper Wash, peel and seeds from the ground, washed tomatoes. Cut the vegetables into small cubes the same. In a frying pan pour a tablespoon of olive oil, put over medium heat, add potatoes. Cook, stirring about 5 minutes.
2. Add the paprika and tomatoes, cook for 3 minutes. Sprinkle vegetables with spices to your taste (hops-suneli, dried basil, black pepper, chopped garlic), add the tomato paste, salt and stir.
3. Make vegetables the four recess and gently pour the egg in them (trying not to damage the yolk). Reduce heat to low, sprinkle the eggs with salt and roast them until tender. Serve with chopped herbs.
