Fried cod in Spanish.

4 skinless cod fillets 200 grams each
80 g butter
1 small thin slice of ham or any other jerked ham
5 sprigs of parsley
1 clove of garlic
half shallot bulbs
1 tbsp. l. almond flour or 5 – 6 almonds
2 tbsp. l. lemon juice
2.1 h. L. Dijon mustard
olive oil
salt, freshly ground
black pepper

1.Preheat oven to 200 ° C. Chop the parsley, shallots and garlic. Hamon chop very finely. Chop almonds in a blender. Mix in a bowl the butter, mustard and lemon juice. Add the parsley, garlic, shallots, ham and almond flour, a little salt and pepper.

2. Heat the olive oil in an ovenproof skillet over medium heat. Season the cod fillets with salt and pepper and cook for 2 minutes. one side. Turn over and cook for 1 minute.

3. Put 1 tbsp. l. oil mixture on each fillet and place the pan in the oven for 3-5 min., until fillets will not be opaque in the center of the piece. Put the fish on a platter and keep warm.

4. Add to the pan the remaining oil mixture and mix with the juices from the pan. Pour over the fish and serve with lemon.
