8 cloves garlic, minced
3/4 cup olive oil
1/4 cup red wine vinegar
1 slice of lemon, squeeze the juice

1 h. L. dried oregano
1 h. L. black pepper
1/2 tsp salt

Dulce de sweet potato (sweet potato paste)

5 cups of mashed sweet potato (boiled potatoes and mash into a puree without lumps – it is very easy)
2 cups water
1/4 cup of agar
4 cups of sugar
1 teaspoon vanilla sugar


Place the sweet potatoes in a saucepan, pour water and heated over medium heat, stirring constantly, to mash not burnt. When the mixture is very hot, to the point of boiling – add sugar and agar-agar and stir until completely dissolved.

Reduce heat and simmer until then, until the water is absorbed and the mixture thickens (about an hour). Remember to stir. Remove from heat and add vanilla.

The resulting mixture pour into a wide rectangular shape (eg, lasagne) and allow to cool completely. When the mixture hardens well, cut it pieces (cubes or slices – as you want, even balls) and store in a tightly sealed container in the refrigerator (up to several months).
