Eggplant baked with cheese, a well-known recipe. For variety, you can put on top of the second piece of eggplant, and you get an interesting dish. Try it!

Eggplant 2 pcs.
Cheese to taste
Tomatoes 2-3 pcs.
Basil to taste
Olive oil to taste
Salt to taste
Pepper to taste

Eggplant cut into discs about 1 cm thick, sprinkle with salt and leave for 1-2 hours to give vegetable juice.
Slice the tomatoes finely.
Basil in a blender grind to a paste-like mass, season with salt and butter (you can also squeeze the garlic).
When the eggplants are ready, wet them with a paper towel and fry until cooked (grilled in the pan or regular).
Preheat oven to 400F degrees. Cut cheese.
Fried eggplant discs put on a baking sheet, the laid paper baking, brush them with a paste of basil.
At half drive to put the pieces of cheese and eggplant close second.
Send in the oven for a few minutes, until the cheese melts.
Then put on a plate, add the chopped tomatoes, drizzle with olive oil, salt and pepper to taste.
