You will need:

  • Eggplant 2 pcs

Onions and garlic peel and finely we will cut. Fry in hot pan with olive oil until soft. Pour tomato sauce, bring to a boil and remove from heat.

Lay the finished mixture on the bottom of a glass or ceramic baking dish. Lay slices on top of vegetables, alternating tomato and eggplant.

Prepare a spicy seasoning. Mix olive oil, salt, pepper, rosemary and thyme, pour it on the vegetables.

Cover with foil shape with vegetables. Bake in a preheated 200 degree oven for about an hour.

When the vegetables are almost ready, they sprinkle with grated cheese and bake until it is melted.
