Cream of cauliflower with tahini.


Serves 4
1st.lozhka olive oil
1 small onion, finely chopped
900g cauliflower into florets to disassemble
1 liter chicken or vegetable broth *
1-2 tablespoons tahini (to taste)
chives, poppy, scallops for garnish

Cooking method:  

1.In a saucepan with a thick bottom heat the olive oil and fry the onion until it is soft and translucent (5-7minut).
2.Add cauliflower and a cup (250ml) of broth. Bring to a boil, add salt and a little cook over medium heat for about 15 minutes Pour the remaining broth, bring to a boil and cook for 5-10 minutes more.
3.perelit soup in a blender, grind until smooth.
4.vylit in the pan, taste, you have to be more salt and pepper. Add tahini and stir. Pour into bowls.
5.sverhu sprinkle with herbs and serve with crackers or toast.

* stock may take longer if you like a more liquid soups.
** soup is simple but very tasty. For a more elegant flow can fry the scallops and add them to the soup. Sprinkle with poppy seeds dry.
