Classic Kish Lauren.


-250 g of sifted flour
-A pinch of salt
-125g chilled butter, grated on a coarse grater
-1 chilled egg
-3 tbsp. tablespoons ice water
For filling:
-250g bacon
-200 ml whipping cream
-4 eggs
-150 g grated Gruyere cheese
-Salt and freshly ground black pepper to taste
-Pinch of grated nutmeg

How to cook:
1. For the dough: Mix the flour with salt, add the flakes of butter, eggs, water and salt (you can use a food processor with knife-nozzle). Roll into a ball, wrap with cling film, to remove 1 hour in the refrigerator.
2. For the filling: bacon cut into small strips and fry.
3. Mix the cream, grated cheese 2/3, lightly beaten eggs. Season with salt, pepper and nutmeg. The egg-cream mixture put bacon.
4. Preheat oven to 190 C. Roll out the dough, put in a form with borders, make punctures with a fork. Bake for 15 minutes.
5. Take the cake, put him stuffing, sprinkle with the remaining cheese on top and bake for another 30 minutes.
