Ciambotta – Mixed vegetables.

Ciambotta translated as “mixture”, and usually consists of a variety of vegetables, but usually contains eggplant, peppers and tomatoes. You can add the zucchini and mushrooms. You can stew with meat or fish. I have a very simple structure of the basic ingredients. Serve with slices of bread, I, fried with eggs.

-olive oil 1-2 tbsp. l.
-chilli 2 pieces.
-large eggplant, peeled and cut into cubes 1 pc.
-large red pepper, cut into cubes 1 pc.
-large tomatoes, blanched, peeled, cut into cubes 1 pc.
-medium onion, cut into cubes 1 pc.
-salt and pepper to taste
-6 pieces of bread pieces.
-eggs 6 pieces.
-little vegetable oil for frying bread to taste

Heat the oil in a large frying pan.
Put there all vegetables, cover and cook over medium heat, stirring occasionally, until vegetables are tender. Approximately 8 minutes
Remove cover and continue to simmer until the vegetables all the liquid is evaporated, about 5 minutes Salt and pepper, to keep warm.

Separately, fry each slice on one side with butter for 1 minute.
Turn over, break one egg into the center and fry until cooked for 3-5 minutes.
