Christmas gingerbread cookies – Piparkakku.


· 250 g of butter (margarine), room temperature
· 200 ml of a dark syrup or molasses
· 175 ml brown sugar
· 1 tsp kardamona
· 1 tsp ground cinnamon
· 1 tsp ground ginger
· 1 tsp cloves
· 1 tsp orange zest
· 100 ml cream
· 1 egg
· 100 ml of red wine (I had grape juice)
· ~ 800 g flour
· 2-3 tsp baking soda

Cooking method: 

Mix the flour and baking soda.
Pour the syrup into a pan, wine and all the spices, stir and boil. Remove from heat.
Add the butter and all beat with a mixer until the mixture is slightly cooled.
Beat egg with sugar and cream.
Sift the flour into the syrup and mix with a mixer, add the egg mixture and mix thoroughly again.
Sift the remaining flour and knead the mixer using the dough to a uniform smooth consistency.
Wrap in foil and the dough is put at least 12 hours in the refrigerator.
Remove the dough from the refrigerator and leave for 1 hour at room temperature.
Roll dough thickness of 5 mm and using molds cut biscuits.
Put the cookies on a baking sheet lined with paper
Bake in a preheated 175 C oven for 6 – 7 minutes.
