Carrot-coconut pancakes

Carrot-coconut pancakes.


1 cup flour
2 tablespoons sugar
1/4 cup coconut flakes
1.5 teaspoons of baking powder
1 cup milk
1 tablespoon melted butter
1/2 cup grated carrots
1 teaspoon vanilla
2 tablespoons chopped walnuts or pecans

Combine the flour, sugar, baking powder, salt and 2 tablespoons of coconut. Pour in the milk, butter, vanilla. All stir and add the carrots and leave the dough for 5 minutes until the pan is heated.
Fry small pancakes on both sides until golden brown. Each pancake sprinkle with nuts and then only upside.
Serve with butter, coconut and warm maple syrup or honey.
