CAKES Runeberg

One of the most popular delicacies in Finland.


150 g butter (margarine)
150 ml sugar
2 eggs
150 ml of finely ground almonds
150 ml ground cookies (any taste)
100 ml flour
1 tsp baking powder
50 ml of milk (cream, orange juice, almond or orange liqueur)
1 tsp cardamom (optional)
3 – 5 drops of natural extract of bitter almonds (optional)

100 ml of raspberry jam
100 ml of icing sugar
2 tsp water

1. Fry the almonds on a dry frying pan until golden brown.
2. Beat in the lush foam, cream butter and sugar.
