Cake with spice.

cinnamon and ginger powder – 1 tsp.
baking powder for the dough – 1/2 sachet
Pitted dates – 80g
strong tea with bergamot – 1/2 cup
Prunes pitted – 90 g
seedless raisins – 120 g
sugar – 130 g
Eggs – 3 pcs.
Wheat flour – 280 g

Cooking method:
Dried fruits cut into pieces, pour the hot tea and leave for 30 minutes.
Beat eggs with sugar, add the flour, baking powder, spices, dried fruit prepared with tea and knead the dough.

Put the dough into a mold lined with parchment and bake for 1 hour at a moderate temperature.

When a cake lay out of shape, remove the parchment. Cut the cake into pieces and complete with mint leaves.
