Cake with carrots, apples and oranges

• 1 kg of carrots, peeled and grated (the author used about 6 large carrots)
• 350g of apples (preferably green, such as Granny Smith varieties), peeled and grated (the author used the 3 ½ large apple)
• 300g flour with baking powder (or 300g flour + 1 teaspoon of baking powder)
• 1 teaspoon baking soda
• 200g sugar
• Juice and zest of 1 orange (about 140ml)
• 180ml olive oil
• 130gr raisins
• 2 teaspoon cinnamon

1. Preheat oven to 180 degrees. Cover the baking paper with a diameter 24-36sm.
2. Grate the apples and carrots, can be using the blender — it’s faster. If the weight entered is too juicy, should defer a small part of the way and do not add to the dough.
3. Add all the ingredients in a large bowl and mix thoroughly.
4. Spoon batter into the pan and bake for 1 hour and 15 minutes, or until a toothpick will come clean. If the test browns too quickly, cover with foil.
5. Give a cake to cool for 15 minutes and serve, sprinkled with powdered sugar.
