Blueberry muffins. (British cuisine)

Delicate cake with blueberries and lemon icing. You can use both fresh and frozen berries!

You need:

Sugar — ¾ cup

Butter — ½ cup

Eggs — 3 pieces

Flour — 1 ½ cup

Baking powder to the test — ½ tsp

Lemon zest — 1 tablespoon

Blueberry (fresh or frozen) — 1 cup.

For the lemon icing:

Fresh lemon juice — 3 tablespoons

Powdered sugar — 1 — 1 ½ cup


With the mixer whisk melted butter and sugar for approximately 3 minutes. Continuing to whisk, add eggs.

Stir in egg-oil mix flour, baking powder, salt (to taste) lemon zest. Stir until smooth state.

Blueberries pre-mix the flour with the dry: this will prevent excessive leakage of juice during cooking.

Preheat oven to 180 degrees. Baking dish and sprinkle with oil smezhte flour.

Evenly spread half of the blueberries on the bottom of the form. Top with pastry. On top decorate with remaining blueberries.

Bake for 70-75 minutes, checking the readiness of a toothpick. An hour after the start of cooking, cover with foil cupcake that is not burnt crust.

Remove from oven. Cool.

For the glaze of powdered sugar slowly mix with the lemon juice. If necessary, you can increase the amount of juice.

Apply the icing on the cake.

Cake can be stored at room temperature for up to 5 days!
